Ingredients

    For 3 people:
    2-4 potatoes (approx 400g altogether)
    1/4 cup skim milk
    6 eggs
    6 Tbsp chopped onion
    1 package chopped frozen spinach
    Cooking spray
    Salt and pepper to taste

Directions

Peel potatoes, boil and mash with skim milk.
Cook spinach per package instructions.
Scramble eggs in bowl, spray fry pan with cooking spray, sautee chopped onions and add eggs. Cook until set.

    They are three separate dishes that happen to taste good together :)

    Incredible!
    My mom used to serve this to us when we were kids, but she added a slice of rye or pumpernickel bread! She usually creamed the spinach with some sour cream, salt and pepper. - 4/12/10
