Introduction

This is an amazing chicken salad that can be served on croissants, flat bread or on a bed of lettuce. None of which are included in the nutritional value. The original recipe calls for pecans and regular mayo. I lightened it up with almonds and light mayo. Ingredients

    Valley Fresh Canned Chicken, 12.5 oz
    Best Foods Low Fat Mayo, 1 Cup
    Apple, fresh, 1 medium (chopped)
    Curry powder, 2 tbsp
    Cranberries, dried, sweetened (craisins), 1/3 cup
    Almonds (sliced or chopped) 1/4 cup

Directions

Mix all ingredients! Place on crouissant, flat bread or lettuce. Enjoy! Yields 5 1/2 cup servings.
