Number of Servings: 6

Ingredients

    2 med onions, chopped
    6 cloves garlic, crushed
    2 med carrots, sliced diagonally
    2 stalks celery, sliced
    4 med potatoes, rough diced
    1 pkg sliced baby bella mushrooms
    1-12oz can tomato paste
    2 lbs stew beef
    1 carton beef stock or broth
    1 tbsp dried rosemary or 3 sprigs fresh
    1 tbsp dried oregano
    salt & pepper to taste

Directions

In a large crockpot, layer ingredients in order listed. Cover and set cooking time for 8 hours.

Serves 6.

    Very Good
    I was able to adapt this for the Dutch oven and substituted a can of the chopped tomatoes for the paste, and also added 1/2 cup of red wine. Adding parsnips added some sweetness to the mix. - 1/19/12

    Great! Very good. My husband and daughter loved it. I used a whole roast instead of stew meat and a can of diced tomatoes instead of the paste (forgto to get it at the store). I highly recommend seasoning and browning the meat before adding to crock pot. Adds a lot of flavor to it. Wonderful!!! - 3/16/10

    Very good, classic pot roast. It has a lot of liquid, I would cut the liquid in half if you wanted it less soup/stew like. Will definitely make again. - 9/27/09
