Introduction

I like this so much, I'll eat leftovers for breakfast (I don't even reheat it). We typically use it as the main course, or can be a side dish for any Mexican meal. I show 3 T of bacon grease in the ingredients list. I'm not exactly sure how much I use, I just add it for flavor. This used to be one of my favorites as a kid & one of the first main meal dishes I learned to cook. I like this so much, I'll eat leftovers for breakfast (I don't even reheat it). 1 c Brown Rice (cooked)
1 can tomato sauce (8 oz)

    1 large onion chopped
    1 green pepper chopped
1 lb of bacon cooked crispy

Tips

The bacon grease gives this recipe added flavor. It definitely can be omitted.

Cook rice according to package directions. Cook bacon till crispy, pat grease from bacon & break into bite size pieces. Reserve bacon grease. Chop onion & green pepper. Saute onion & green pepper in bacon grease or olive oil (2 T). Add rest of ingredients & stir to combine & cook over low heat (be sure to rinse tomato cans with a little water & pour in). Incredible!
I've been making a recipe much like this for years. I don't use as much bacon or the bacon grease, olive oil instead and add oregano. - 1/24/13
