Simple way to cook eggplant. Simple way to cook eggplant.
Number of Servings: 4

Ingredients

    1 small eggplant
    1 tbsp olive oil
    1 tbsp pepper
    dash salt

Directions

Preheat oven to 450 degrees

Slice eggplant into thin slices. Brush oil on pan. Place strips on pan and sprinkle salt and pepper evenly. Bake for about 20 minutes.

Makes 4 servings as a side dish.
