Introduction

So flavorful and less than 250 calories (including the pita and everything!)!!

I got three servings out of it, but you may get more or less. Enjoy!!

Ingredients

    1 boneless, skinless chicken breast - cooked and shredded
    1/2 apple, peeled, chopped
    Appx. 2 Tbsp Light Mayo (depends how saucy you like your chicken salad, you can add more if needed)
    Splash of white wine vinegar
    Cap full of lemon juice
    1/2 Tbsp honey (again, eyeball it, depends on how sweet you want it, use it to balance our the vinegar)
    1/2 tsp dried thyme leaves
    Salt, pepper to taste
    1/2 pita pocket
    A few walnuts chopped up (for crunch)
    Sliced tomato, parsley (optional)

Directions

Mix Mayonnaise, honey, splash of lemon juice, splash of white wine vinegar, dried thyme leaves, salt, pepper in a small bowl.

Mix together the chicken, walnuts, and apples together.

Add sauce to chicken mixture and stir. Stir in chopped parsley (optional).

Stuff chicken salad in pita pocket with a few tomato slices and enjoy!!
