Introduction

My grandmothers recipe to a down home southern favorite! The nutritional facts of this recipe do not include any oils that the croquets may be fried in. Ingredients

    1 15 oz can of Jack Mackerel (with the water)
    4 oz (1 stack) of saltine crackers, crushed
    2 large eggs
    1 medium onion, chopped
    season to taste (no salt!)

Directions

Empty entire can of mackerels, including water, into a large bowl. Remove the bones if desired. Separate the mackerel with a large fork until it looks minced (or coarser, if desired). Add 2 eggs and stir into the mixture. Take one whole stack of saltine crackers and crush. This can be done in the pack with a rolling pin, or in a food processor. The pin is quicker for me! Add to the mackerel and eggs. Peel and chop 1 medium onion and add to mixture. Season to taste and stir in. Let mixture sit 5-8 minutes so the crackers can absorb moisture from the water and eggs. Do NOT skip this step. You'll be SOOORRRYYY. Makes 13-15 croquets. Deep fry in medium hot oil (sorry I don't have the temp) for 4-6 minutes or until medium brown (frying to quickly will leave insides uncooked), or on Foreman grill for 4-6 minutes.
