Ingredients

    2 pounds Granny Smith apples
    2 tbsp lemon juice
    1 1/4 cups white sugar
    1 1/4 cups water
    1 oz fresh mint

Directions

1. Bring the water and sugar to a boil, stirring frequently until sugar has dissolved. Add mint, and remove from heat immediately. Let cool completely, refrigerating at least 8 hours.

2. Peel and chop apples into 2 inch pieces. Cook over medium heat until softened, with 1/4 cup water. Meanwhile, remove the mint leaves from the syrup.

3. Transfer to a food processor, and puree with lemon juice and mint syrup until smooth. If desired, add 5-10 mint leaves while pureeing, for texture and appearance. Chill thoroughly.

4. Freeze in an ice cream maker according to manufacturer's directions.

5. Transfer to an airtight container, freeze at least 4 hours before serving.

Makes 12 1/2 cup servings.
