2 boxes corn muffin mix, 8.5 oz size
2 large eggs
2/3 cup skim milk
2 cups fresh spinach, chopped
3 tablespoons flax seed
1/4 cup crude wheat germ
1 tsp cayenne powder
Directions
Preheat oven to 400 degrees.
In a large bowl, mix two boxes corn muffin mix with 2 large eggs and 2/3 cup skim milk. Add 3 tablespoons flax seed, 1/4 cup crude wheat germ, and 1 tsp cayenne powder. Chop 2 cups of fresh spinach and fold into batter, mixing only until all ingredients are moistened.
Spoon into 12 muffin cups (greased if you aren't using paper muffin cups.) Bake in oven for 23 - 25 minutes. 2 muffins equals one serving for this recipe.
