Number of Servings: 8

Ingredients

    1 cup water
    15-20 whole cloves
    3-5 pieces cinnamon bark or cinnamon sticks
    3 1/2 tablespoons instant coffee
    1 cup sugar
    1 gallon chilled milk
    1 tablespoon vanilla (optional)
    1 cup of a clear flavorless alcohol (optional), typically pisco or aguardiente. Other options: clear or vanilla rum, everclear, brandy, or use your imagination.

Directions

1.. Place cloves and cinnamon in water. Heat until just boiling, then reduce heat to very low and simmer until cloves are soft and the volume is reduced about 1/2 (about 30 minutes.) Meanwhile, chill the milk.
2.. In a small saucepan, heat 1 cup milk (taken from the gallon) and 1 cup sugar together, stirring constantly, until just boiling. As soon as it starts to boil, remove from heat and stir in the instant coffee powder.
3. Pour the steeped spice water into the coffee mixture using a strainer. If you want you may add a small amount of milk to the cinnamon and cloves to extract the remaining flavor. If adding vanilla, mix it into the coffee solution at this point.
4. In a large bowl or pot, pour the chilled milk (1 gallon minus 1 cup) and then slowly stir in the hot coffee and spice mixture. If adding alcohol, start with a small amount (about 1/2 cup) and increase to taste. Be careful with booze that has its own strong flavor (like brandy or dark rum) as it may overpower the taste of coffee and spices.
