Ingredients

    * Chickpeas (garbanzo beans), 1.5 cup dry
    * knorr vegetable bouillon, 1 serving
    * onion, 0.5 cup
    * Garlic, 2 cloves
    * Parsley, 0.5 cup
    * Bread crumbs, dry, grated, plain, 1 cup
    * 2 Grade A Extra Large White Eggs
    * Walnuts, 0.75 cup, chopped
    * Olive Oil, 2 tbsp
    * Soy sauce (tamari), 1 tbsp

Directions

Soak chickpeas for 4 hours, then pressure-cook for 25 minutes (or use 1 large can, drained and rinsed). In food processor, buzz the garlic and onion until minced, then add the chickpeas, bread crumbs, and parsley and combine. Place the chopped walnuts in a bowl and add the chickpea mixture and eggs, salt, and pepper and stir until combined. Form into 12 3-inch patties. Chill about an hour. Heat oil and place patties in oil to brown.
