Introduction

I've always loved my Dad's recipe for Mexican Rice, and now that I'm eating healthier I thought I'd try it with brown rice instead of white, my family loved it! I've always loved my Dad's recipe for Mexican Rice, and now that I'm eating healthier I thought I'd try it with brown rice instead of white, my family loved it!
Number of Servings: 8

Ingredients

    1 1/2 cup brown rice
    2 tsp olive oil
    3/4 cup chopped onion
    2 cloves chopped garlic
    1 green bell pepper, diced
    1 yellow bell pepper, diced
    1 can Rotel
    1 can tomato sauce
    3 cups water

Directions

In large skillet, saute onion, garlic, and bell peppers in olive oil for a minute or two.
Add rice and stir to keep from over browning.
When browned, add Rotel and let simmer 1 minute.
Add tomato sauce and water and stir.
When boiling, reduce heat to medium-low and place lid on pot.
Let boil 45 minutes, or until water has cooked out.
Makes 8 servings.
