Introduction

This is a modified version of a recipe taken from AllRecipes.com. Penne rigate, chicken, pesto, parmesan cheese, and sundried tomatoes combine to make a splendid Italian/Mediterranean style pasta dish. Add steamed spinach or broccoli to get in those vegetables! Ingredients

    penne rigate, 2c cooked
    olive oil, 2 tsp
    chicken breast, about 1, cut into strips (6oz cooked)
    minced garlic,1/2 tsp
    half and half Cream, 1/4c + 2 tbsp
    pesto, 2 tbsp
    grated parmesan cheese, 1 tbsp
    sundried tomatoes packaged without oil, diced, 3 halves
    pepper to taste

Directions

Note: The recipe uses regular penne; you can substitute multigrain or whole wheat penne if you choose but the nutritional information will be different.

1. Cook penne in boiling water as per directions on package; drain.
2. Add oil to skillet or pan and heat on medium. Cut chicken breast into strips and sautee until mostly done.
3. Dice sundried tomatoes. Mix garlic, half and half, pesto, parmesan, and diced sundried tomatoes into the pan with chicken. Cook until chicken is done, or sauce is beginning to thicken.
4. Add penne to pan, and stir or toss to mix thoroughly. Cook until sauce is to your liking.
5. Season with pepper to taste, if necessary.

    I was able to lower this recipe's calorie count and upping its nutritional value a little bit by substituting light sour cream for the half & half, using whole grain pasta, and adding some fresh spinach to the sauce. It was really good! Even my picky kids liked it, which says alot. - 7/25/10
