Ingredients

1 cup flour
1 cup oat bran
3 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cup 2% milk
2 egg whites, beaten
1/4 cup honey
2 tablespoons butter, melted
Directions
Preheat oven to 400 Degrees.
Coat muffin pan with cooking spray.
In a mixing bowl, combine flour, oat bran, baking powder, salt and cinnamon. Mix well; add milk, beaten egg whites, honey and melted butter. Stir to just moisten the dry ingredients. Do not over mix. Pour batter evenly into 6 baking cups, sprinkle each muffin with a pinch of oat bran and bake for 15 to 17 minutes. Tops should be golden brown and spring back when lightly touched in the center.
