Introduction
This is my favorite salad dressing, good with lettuce, baby greens, or any combination of cooled steamed vegetables and beans. If you've wanted to incorporate flaxseed in your diet, this is an easy and tasty way! Naturally contains omega-3 fatty acids, vitamin B-12, C, and riboflavin. Makes 1 cup. Ingredients
-
1/3 cup flaxseed oil
1/4 cup lemon juice
2 Tbsp balsamic vinegar
1/4 cup Bragg's Liquid Aminos
2 tsp Dijon mustard
1 clove garlic, minced
1 tsp each ground cumin and dried rosemary
Directions
Combine all ingredients in a jar and shake.
For extra flavor, lightly toast the cumin in a dry pan before adding to the jar. Dressing will keep for two weeks in the fridge. If you don't have flaxseed oil or Bragg's, substitute for a good olive oil and light tamari for a still-delicious dressing, but it will lack some of the nutrients.
