Ingredients

    2 cups uncooked brown rice
    1.5 pounds lean ground beef (can substitute ground turkey)
    1/2 tsp salt
    1/2 tsp pepper
    1 cup chopped onion
    1 cup chopped bell pepper
    1.5 15-oz cans tomato sauce
    strips/squares of bell pepper to line dish
    4 slices mozzarella cheese

Directions

Cook rice according to package directions, omitting any salt and/or butter. In skillet, brown ground beef with onion and chopped bell pepper, adding salt and pepper.
When rice is done, add beef mixture and tomato sauce and mix well. Line bottom of 2.5 quart casserole dish with bell pepper strips/squares. Pour rice mixture on top. Lay cheese over the top.
Bake at 350 for 20-30 minutes, long enough for the cheese to bubble and begin to brown.

    This was lacking something... spices, maybe. I think if you substitute the tomato sauce w/ a jar of already seasoned Ragu this recipe would be just perfect!! Otherwise, it was really good!! I added a bit of garlic powder. I will DEFINITELY try it again w/ seasoned sauce. The prep wasn't so bad! - 9/18/08

    Really good! I added some diced tomatoes and garlic. I like things spicy so I also added cayenne, red pepper flakes and hot pepper sauce - made it perfect for my tastes! - 2/27/10

    Ummm...YUM! Great if you like peppers (and I do!) Cut the recipe in half though unless you're feeding an army :) - 11/21/07

    Incredible!
    I looked at all the different comments and combined a few - used turkey meat, added beans and corn and put less rice and more sauce and spices and it was delicious!! I will definitely be making this again! - 6/28/13
