Introduction
This is a wonderful granola. My husband eats it with Vanilla Silk for breakfast. We also put it in yogurt or just eat it straight out of the container. Ingredients

3 cups of rolled oats
1 cup slivered almonds
1 cup chopped pecans (can use other nuts)
1/4 cup flax seed
1/4 cup brown sugar
3/4 cup shredded coconut
2 tsp ground ginger
1 tsp ground cinnamon
zest from 1 orange
2 tsp fresh ginger root, minced.
1/4 cup plus 2 TBSP of honey
1/4 cup vegetable oil
3/4 tsp salt.
1 cup orange Craisins
Directions
Preheat oven to 250 degrees.
In a large bowl, mix together rolled oats, slivered almonds, chopped pecans, flax seed, brown sugar, shredded coconut, ground ginger, ground cinnamon, orange zest and ginger root.
In separate bowl, mix together honey, vegetable oil and salt.
Add the liquids to the dry ingredients and mix together.
Spray baking sheet with cooking spray.
Pour the mixture on to the sheet.
Bake at 250 degrees for 45-75 minutes (depending on your oven), stirring every 15 minutes for even baking. When it reaches desired color remove from oven and return to bowl. Let granola cool for 20-30 minutes.
Mix in orange Crasins. Serve.
