Introduction

Ingredients

    1.5 lb of pork loin cutlets (or thin boneless pork chops)
    2TBSP Dijon Mustard
    2TBSP Olive Oil
    2 oz dry wt (about 1 heaping cup) of hard pretzels

Directions

Pulverize pretzels in food processor or "bullet" to a consistency similar to coarse bread crumbs. Pour out onto a plate.

Meat should be thinly sliced or pounded thin into 4 oz portions. (6 pieces of meat totalling 1.5 lbs)

Brush meat with dijon mustard and dip both sides in pretzel crumbs

brown in olive oil on medium-high heat for 2-3 min each side

place in baking dish and bake in oven at 350 degrees for 20 minutes.

I usually already have potatoes baking in the oven in advance and just add the meat to the oven. Very good with sweet potatoes and a green veggie!
