Introduction

Baking Pollock or any firm white fish on parchment paper. i used saltines for my crackers. Everyone has stale saltines hanging out in the back of their pantry. Ingredients

    1 oz Crackers
    16 oz fish
    1-2 Tb olive oil
    Spray of pam
    dill, paprika, pepper, and salt

Directions

Thaw, rinse and pat dry fish. Crush crackers, mix in spices to taste. Rub fish with olive oil. Pat on cracker mix. Place on parchment paper and place in 300 degree F oven. Bake till fish just barely flakes with fork. Remove and cover rest and finish cooking. Combine with steamed veggies, sprinkled with parm.

    I don't like that I had to look up the cooking time of this dish, but the spices did the job. I also used panko instead of bread crumbs. - 6/6/12
