Introduction

Kind of like Chile Rellenos, kind of not at all. Kind of like Chile Rellenos, kind of not at all.
Number of Servings: 12

Ingredients

    6 large poblano peppers

    Morningstar Farms Meal Starter Soy Crumbles (1 bag - 12 oz)

    1 bag mixed vegetables (I like a baby broccoli blend) (12 oz)

    Half cup of salsa

    Seasonings (to taste - use cayenne, garlic, salt, cumin, coriander, cinnamon...whatever you have)

    1c. cheddar cheese (shredded)

    .5c. panko bread crumbs

Directions

Wash poblanos, cut off tops, scoop out seeds. Cut each in half lengthwise and bake in over for 15 minutes at 400 degrees.

In the meantime, combine vegetables, salsa, and crumbles in a pan with seasonings - cook till done (about 15 minutes)

Arrange now hot poblano halves on a baking sheet. Scoop 1/12 the crumble/vegetable mixture into each pepper, then top with a little cheese and panko crumbs.

Bake in the over until the panko is crusted - roughly 15 minutes more.

Serve alone or with more salsa! Enjoy!
