Ingredients

1 1/2 cups white whole wheat flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/8 tsp salt
1 egg
1 cup mashed banana
3/4 cup sugar
1/4 cup cooking oil
nonstick spray coating
Directions
Makes 1 loaf (about 16 1/2-inch slices)
In a medium bowl, stir together dry ingredients except sugar.
In a large bowl, stir together sugar, egg, mashed banana, and oil.
Stir flour mixture into banana mixture just until moistened.
Spray an 8x4x2 inch loaf pan with nonstick spray. Spread batter in prepared pan. Bake in a 350 degree oven for 45 to 50 minutes or until a toothpick inserted near the center comes out clean.
Cool bread in the pan 10 minutes before removing. Cool thoroughly on a wire rack. For easier slicing, wrap the bread in plastic wrap and store overnight.
