Ingredients

4 Eggs
2 Large Zucchinis (or about 350g), grated
1/4 Cup of extra virgin olive oil
1 large onion, diced
4 rashers of back bacon, diced (fat removed)
1 1/2 cups of whole wheat self raising flour
1 cup of Cheddar Cheese, grated
1 large tomato, in slices
Directions
1. Mix the flour, zucchini, onion, bacon and cheese together.
2. In a separate bowl, lightly beat the eggs and mix the olive oil into the eggs then pour into the dry ingredients and mix together.
3. Lightly greese an baking tray (or use the reuseable non stick oven sheets) and pour mixture in.
4. Place the sliced of tomato on top.
5. Cook in a moderate oven for approx 20 - 25 mins, check the centre is cooked with a skewer.
6. Let it cool slightly befor slicing into 8 -10 peices and either eat it warm or cool and freeze for another day.
