Introduction

Our family reunites, one and all, for a wonderful beach vacation once a year. We take turns cooking, cleaning, and doing the rest of the chores...BUT we don't count calories for that one week!! Ingredients

    1/3 cup milk
    3 large eggs

    3/4 cup grated Parmesan cheese
    3/4 cup seasoned dry bread crumbs
    1/2 tsp. black pepper

    10 (~5 oz. each) pounded veal
    5 TBSP. extra virgin olive oil

    2 medium onions minced
    3 cloves garlic
    2 (28 oz.) cans tomato puree
    2 (14.4 oz.) cans diced tomatoes
    1 1/2 TBSP. parsley, dried
    1 TBSP. oregano, dried
    1/4 tsp. black pepper

    20 (~1 oz. each) oz. sliced mozzarella

Directions

Makes 10 PIG portions for vacation fun.

Beat the eggs and milk in a shallow dish.
Combine Parmesan, bread crumbs, and pepper in another shallow dish.
Dip veal in egg mixture, then coat well in crumb mixture.
Heat oil in large fry pan over medium-high heat. Saute veal until browned, 45-60 seconds on each side. Drain on paper towel. Set aside.
Saute onion and garlic until soft. Then add tomatoes and spices. Reduce heat to low, cover, and simmer sauce for 10-15 minutes, stirring occasionally.
Preheat oven to 350 degrees. Spoon some sauce on bottom of baking dish, arrange veal over sauce, top each one with two slices mozzarella, and pour more sauce on top. Bake until sauce bubbles up, about 25-35 minutes. serve hot.
P.S. As I said we pig out so there is pasta, garlic bread, and salad also! Calories not included here...LOL ;-)
