Introduction

This is my basic salad dressing recipe, taught to me by a good friend from France. You can change out the oil or vinegar type, add light mayo to make a creamier dressing, use sugar or Splenda instead of honey, add garlic or shallot to give it more of a bite, switch vinegar out for lemon or lime juice, etc. Basic and versatile. Ingredients

    5 T red wine vinegar (or other vinegars as you wish, i.e. white wine or balsalmic- I often use a mixture)
    3 T olive oil
    1 tsp coarse ground mustard
    1 T honey
    generous dash salt and pepper

Directions

In the bottom of a bowl (to whisk) or jar (to shake) put dash of salt and pepper, mustard, and honey. Add vinegar. Whisk or shake to combine. If whisking, slowly whisk in the olive oil until well combined. If shaking, add olive oil and shake the jar vigorously until everything is combined. Dress salad immediately or serve on side (will need to restir periodically- dressing will not stay emulsified for long).
