Introduction

These pumpkin muffins are light but satisfying. The original recipe called for less pumpkin but I found that this worked out better and tasted more like pumpkin. Ingredients

    1/4 Cup Shortening
    1/2 Cup Sugar
    3/4 Cup Cornstarch
    1/2 Cup Potato Starch
    1/2 Cup Milk
    3/4 Cup Pumpkin
    1 Egg
    2 tsp Baking Powder
    1/4 tsp Baking Soda
    1/2 tsp Salt
    1/2 tsp Ground Cinnamon
    1/4 tsp Ground Nutmeg
    1/4 tsp Ground Ginger
    scant 1/2 tsp Xanthan Gum

    for topping: 1-2 Tbsp sugar

Directions

Preheat the oven to 350 degrees. In medium bowl combine the sugar and shortening until it is light and fluffy. Add the remaining ingredients and mix well. Be sure to remove any lumps from the batter. Fill greased muffin tins about 2/3 full. Sprinkle sugar over the top of each muffin.

Bake 18-20 minutes until toothpick inserted in muffin comes out clean and the tops no longer look wet.
