Ingredients

    2 cups fresh green beans, cut in 2-inch pieces or 1 15 oz. can kitchen cut green beans, drained
    1 15 oz. can kidney beans, rinsed and drained
    1 15 oz. can hominy, yellow or white, rinsed and drained
    1 15 oz. can black beans, rinsed and drained
    1 cup thinly sliced celery
    1 cup chopped sweet red or vidalia onion
    1/2 cup minced fresh cilantro
    1/2 cup white wine or cider vinegar
    1/8 cup olive oil
    2 teaspoons Splenda
    1 garlic clove, minced
    1/2 tsp. salt
    1/2 tsp. coarsely ground black pepper


Directions

If using fresh green beans, place in a saucepan and cover with water. Bring to a boil and cook, uncovered for 8-10 minutes or until crisp tender. Drain and rinse in cold water.
In a serving bowl, combine green beans, kidney beans, black beans, hominy, celery, and onion.
In a jar with a tight-fitting lid, combine remaining ingredients. Shake well. Pour over vegetables and stir gently to coat. Cover and refrigerate for at least one hour.
Makes approximately 12- 1/2 cup servings.
