Introduction

Ingredients

    1 Egg
    1/3 cup egg whites from carton or egg whites from 2 eggs
    a couple of mushrooms, chopped
    handful baby spinach (aprox. 1/2 cup packed)
    1 oz. feta cheese

Directions

Scramble together egg and egg whites. Chop mushrooms. Spray pan with cooking oil (if non-stick) and sautee mushrooms until soft. Add spinach and cook until it begins to wilt. Pour on egg mixture and sprinkle with feta cheese. When egg starts to pull away from pan, flip to make omelet. Cook until egg stops running.
