Introduction

another way to use up the lettuce from your garden or CSA share! this makes about 4 servings. another way to use up the lettuce from your garden or CSA share! this makes about 4 servings.
Number of Servings: 4

Ingredients

    1 bunch lettuce (I used romaine)
    2 potatoes
    1 tbsp olive oil
    1 large onion
    garlic to taste
    veggie or chicken stock, or water (I used a large saucepan's worth...several cups, but less than a quart)

Directions

dice onion and saute until translucent in olive oil. then add garlic and saute for a few more minutes. add stock or water, then add diced potatoes. once potatoes are tender, add lettuce and simmer for a few minutes. add salt and pepper. puree soup with immersion blender or in a blender. if desired, add more water to achieve desired consistency. serve with a dollup of tofu or regular sour cream and add additional salt and pepper to taste.

    Very Good
    This was a bit bland and required a few extra herbs and spices for my taste, but it was a perfect use for the wilted lettuce I always end up throwing away, and wonderfully low in calories for such a substantial-seeming soup. - 6/2/12
