Ingredients

    3/4 Cup thin sliced red onion, slices cut into half
    8 Cups small cubed seedless Watermelon
    3/4 Cup Feta Cheese
    14 Black Olives, sliced
    2 Tablespoons Olive Oil
    1 Cup chopped fresh Mint leaves, optional

Directions

Combine in a small bowl the red onion slices and the lime juice. Let stand for 10 minutes.

In large bowl, combine watermelon cubes, feta cheese, black olives, mint if used. Add the set aside onion slices. Drizzle with olive oil and toss.
