Introduction

This is a recipe my grandmother used to send me in my care package at college. By using low fat cream cheese, I have modified to be a healthy snack. This is a recipe my grandmother used to send me in my care package at college. By using low fat cream cheese, I have modified to be a healthy snack.
Number of Servings: 10

Ingredients

    2 eggs
    2 tbsp vinegar
    2 tbsp sugar
    salt and pepper to taste
    1 pkg low fat cream cheese (softened)
    1 small bell pepper
    1 small onion

Directions

In small sauce pan combine eggs, vinegar, sugar, salt and pepper. Beat ingredients. Cook on stove top on low heat constantly stirring until a cottage cheese consistency. Chop bell pepper and onion into small pieces. Place in mixing bowl with cream cheese. Pour egg mixture into mixing bowl. Still all together until smooth. Refrigerate for 1 hour. Serve. (If dip seems too thick after refrigerating, add a little milk to thin out). Serve with veggies and/or crackers as dippers. Makes 8-10 servings
