Ingredients

Beef chuck, arm pot roast, 1 lb
Onions, raw, 1 cup, sliced
Yellow Peppers (bell peppers), 10 strips
Banana Peppers, .25 cup
Del Monte Diced Tomatoes, No Salt Added, 1 cup
*Barbecue Sauce, 1 cup (8 fl oz)
Swanson Chicken Broth 99% Fat Free, 1 cup
Directions
Day One:
Put roast into crockpot with 1 can of broth. You can use beef or chicken.
Add all vegtables. Note: I use hot banana peppers.
Cook on medium about 6 hours.
After 4 hours I remove meat and trim away all fat.
Add meat back to crockpot.
After 6 hours remove meat to a good size platter.
Take two forks and pull beef apart.
Allow meat to cool while you drain broth off vegtables. Add veggies to the meat. Store for cooking on day 2.
You are done with the broth at this point. You can save it or toss it.
Day 2: Put meat and veggies back into croclpot.
Add 2 cups of bbq sauce. Cook at medium heat for 5 or 6 hours.
YUM!
Can You do this all in one day...sure.
Can you elimate or add veggies....sure.
Will the dish be ready in less time....indeed it can be.
