Ingredients

    1 cup canned, diced tomatoes
    1 cup tomato sauce
    1 tsp olive oil
    1 clove garlic, chopped
    5 basil leaves, chopped
    2 TBSP shredded parmesan cheese
2 TBSP carrot, shredded or chopped very fine
    salt/pepper to taste
    2 oz whole wheat pasta

Directions

Boil water for pasta. While it is boiling, make sauce.

Heat olive oil in a frying pan, cook garlic for 1 - 2 minutes at medium heat, add diced tomatoes, tomato sauce, carrot, salt, pepper and basil. When water boils, put pasta in. Cook sauce while pasta is cooking. When pasta is done, drain and pour sauce over it. Sprinkle with Parmesan and enjoy with a salad!

The carrot and basil in this sauce take the acidity out of the tomatoes. It replaces the sugar that a lot of people put in sauce. You can also add onion and other herbs and spices if you wish.
