    1 medium red onion
    1 cup liquid egg subsitute
    1 cup skim milk
    1/2-cup all purpose flour
    10 slices turkey bacon
    1/2-cup fat free shredded cheddar
    1/2-tsp baking powder
    hot sauce, salt, pepper to taste


preheat oven to 400
bake turkey bacon on cookie sheet about ten minutes, or until crisp
sautee onions until transluscent,
add spinach until wilted, then remove from heat
wisk together egg substitue, skim milk, flour and baking powder
finely chop bacon, then combine along with cheddar, onions and spinach into egg-milk mixture
add hot suace, salt substitute, and pepper
bake at 400 for about 30-min, or until knife can be cleanly withdrawn from center of quiche
cool for five minutes, then divide into six slices
pour into 8-inch pie tin lightly sprayed with olive oil

    I would like to try this recipe but had a question about the spinach... is it frozen spinach or fresh? And if frozen does it need to be thawed and the liquid removed? - 7/14/10
