Ingredients

    Corn kernels from 2 medium ears of corn (can be cooked or raw)
    12 oz canned low-sodium black beans, rinsed and drained
    1/4 cup red onion, thinly sliced into half moons
    1/2 cup cherry or grape tomatoes, quartered
    1/4 to 1/2 cup scallions, sliced diagonally
    1 small serrano pepper, minced
    1 oz cotija or feta cheese, crumbled
    1/4 cup chopped fresh cilantro
    2 tbsps olive oil
    Juice of 1 lime
    1/4 tsp cumin
    dash salt and pepper

Directions

Combine all ingredients in a large, non-reactive bowl. Chill for about 20 minutes or so to give flavors time to blend. Makes 6 servings.
