Ingredients

    Two pounds pork loin cut into about in inch squares, 2 medium onions, sliced, 2 teaspoons minced garlic, one teaspoon salt, one tablespoon powdered cumin, one eighth teaspoon black pepper, one chipolte pepper, finely chopped, plus one tablespoon sauce from can, three cans Ro-Tel diced tomatoes and green chilies

Directions

Cook two medium sliced onions and two teaspoons minced garlic in small amount of EVOO for 4-5 minutes. Stir in one teaspoon salt, one tablespoon ground cumin,and one eighth teaspoon black pepper. Add the two pounds pork cut into one inch squares and brown. Stir in one Chipolte pepper finely chopped and one teaspoon sauce from can. Add three cans Ro-Tel diced tomatoes and green chilies. Simmer slowly for 30 to 40 minutes. If I have pintos or red beans, I sometimes add a can or two to the chili. It's just fine without the beans,however. This makes about 13 cups of chili. I calculated the recipe to make one serving one cup.
