This is awesome, yummy comfort food. I serve a small scoop on Martin's whole wheat mini potato rolls, which have 5 grams of fiber each, for a high protein, high fiber meal. Ingredients
* Chicken Breast, no skin, 5 ounces (cut into small cubes)
* *Hellman's Mayonnaise with Extra Virgin Olive Oil, 3 tbsp (remove)
* Cranberries, dried, sweetened (craisins), 20 grams (half of a 1/3 cup serving)
* chopped Toasted Pecans, .75 oz
* Dill weed, fresh, 5 sprigs (about 1 heaping T. minced)
* Celery, raw, 4 stalk, small (5" long) (minced)
Directions
Chop and mix all ingredients. Serve on your favorite bread. I use Martin's whole wheat potato rolls for extra fiber. Tastes even better when you toast the buns in a pan over high head sprayed with cooking spray.
