Ingredients

    1.5 Lb Cooked chicken breast
    1 Box of Uncle Ben's Long grain and wild rice original recipe
    1 Can Campbell's Healthy Request cream of chicken soup
    1 Can Campbell's Healthy Request cream of mushroom soup
    1 Can 8oz Water Chestnuts sliced
    1 Lb Broccoli
    10oz box frozen chopped spinach
    .25 Lb mushroom
    6oz 2% velveta cheese
    2oz shredded low fat cheddar

Directions

preheat oven to 350

First cook the rice the way Uncle Benny wants you too. Then de-fat the chicken breast and cut into cubes, then season any way want salt and pepper is always good then cook on medium to high heat until cooked thoroughly. Let rice and chicken cool. Cut broccoli into bite size pieces I like to use the stock as well If you peal it it is really good and is full of calcium. Slice the mushrooms and cook them on medium to high heat with some pam. Thoroughly drain spinach and drain the can of water chest nuts as well. Now combine rice, chicken, broccoli, spinach, mushrooms and water chestnuts in a large bowl. In a microwaveable bowl mix velveta cheese and cream of chicken together and nuke until the cheese is melted then mix in cream of mushroom. Now in a pamed casserole dish layer rice mixture then soup-cheese mixture then rice again then soup-cheese and lastly top with shredded cheese place in oven on center rack uncovered for 60 min.

Makes 8 servings of 1.5 cups give or take

Even better the next day.
