Ingredients

    1# Ground beef
    6 small Sweet potatoes (mashed about 3 cups)
    1 14oz Swanson’s Beef broth 50% less Sodium 100% fat free
    1 C. Water
    2 Tbls Flour
    1 Cup Diced Onion
    1 Cup Diced Carrots
    1 Cup diced Celery
    1 Cup Frozen Peas
    1 Cup frozen Sweet Corn
    2 Cloves Garlic Chopped
    1 Cup Sliced Mushrooms
    2 Tbls Tarragon Leaves
    1 6oz can Tomato Paste

Directions

Yields 6 1 1/2 cup servings

1. Bake, Skin and whip Sweet Potatoes, Set aside
2. Boil Carrots, Onions and Celery in Beef broth about 6 minutes
3. Brown Ground beef with Garlic, Dredge with flour.
4. Add beef broth mixture, corn, Mushroom, and peas. Cook for 5 minutes
5. In a 2 quart casserole dish (8”x11˝”x2”) pour in and spread out evenly
6. Spread whipped sweet potatoes evenly over top.
7. Bake @ 350 degrees uncovered on middle rack for 30 minutes
