Ingredients

Ingredients:
4 boneless Skinless Chicken breast halves
Shallots, (or garlic if you prefer) 4 tbsp chopped
Jack Daniels Whiskey, 4 fl oz
Swanson Chicken Broth 99% Fat Free, 2 cup
Milk, canned, evaporated, nonfat,1 Cup
Milk, 1%, 1 cup
Onions, raw, 1 cup, sliced
Mushrooms, fresh, 1 cup, pieces or slices
Tarragon 4 tsp
Juice of 1 lemon (approx 2-3 tbsp)
Directions
Saute chicken breasts in non-stick pan with spray of Pam (approx 7 minutes per side); wrap in foil and keep warm in 350* oven. (I like to slice mine into pieces first)
Saute shallots (or garlic), onions and mushrooms in a small amount of chicken broth (if you have a lot of liquid from the mushrooms drain excess off)
Add Jack Daniels and light with a match (flame will be high) let flame die down.
Add broth and tarragon.
Bring to a boil over high heat, uncovered, until sauce reduces to thick syrupy glaze (approximately 25 mins).
Reduce heat and add lemon juice and milk combination simmer until thickened, watching the temp carefully to keep the milk mixture from separating (approximately 15 mins).
Put chicken breasts into sauce to coat.
Rodney (the cook from the hospital) always served this with garlic mashed potatoes and fresh steamed green beans. It's also tasty with a bit of rice or pasta, because the sauce is so good you want to get every last bit of it!
