Ingredients

    Red Ripe Tomatoes, 1 medium whole (2-3/5" dia)
    Onions, raw, 1 slice, medium (1/8" thick)
    Serrano Peppers, .15 pepper
    Cilantro, raw, .15 tbsp
    Lime Juice, 1 wedge yields
    Guacamole - Wholly Guacamole 2 Tbsp, 1 serving
    Garden Veggie Pattie, Morning Star Farms, 1 serving
    Olive Oil, .5 1tsp

Directions

1. Prepare Pico de Gallo by dicing a very ripe tomato (OK to let the juice drain off) and mixing it with a mixture of diced onion, hot peppers, cilantro, and lime juice to your personal taste. This will be the base on your plate.

2. Either make guacamole with your favorite recipe or use prepared. You will plop 2 T. on top of the "burger".

3. To cook the veggie pattie, get the olive oil heated up in a heavy pan, then add the pattie. Flip it once immediately, then again every minute or so, lowering the heat only as necessary to keep it from burning.

4. As soon as the pattie is crisp on both sides, place it on top of the salsa, then add a scoop of guacamole on top & enjoy! Serve with "Jo's Fresh Sangria" if desired!
