Ingredients

    1 can shoepeg corn, drain & rinse
    1 can blackeyed peas, drain & rinse
    2 avocadoes, chopped small
    2 roma tomatoes, chopped small
    2/3 c. fresh cilantro, chopped
    2/3 c. green onion, choped (or sweet onion)
    Green or red pepper, chopped smal (optional)
    1/3 c. olive oil
    1/3 c. red wine vinegar
    2 cloves garlic, salt & pepper

Directions

Combine all ingredients and serve with tortilla chips (Scoops)
