Introduction

Tired of the same ol', same ol' meatloaf? Try this delicous original recipe and you'll want to make it again and again! Tired of the same ol', same ol' meatloaf? Try this delicous original recipe and you'll want to make it again and again!
Number of Servings: 4

Ingredients

    1/2 lb ground beef
    1/2 onion, chopped fine
    1 zuchini squash, chopped fine
    3 garlic cloves, chopped fine
    1/2 cup bread crumbs
    1 egg

    2 oz Mozzarella cheese, on the side

Directions

Mix first 6 ingredients with your hands until well blended. Separate into 2 halves.
Roll each half into a ball then flatten it out in the palm of your hand.
Place 1 oz of mozzarella cheese in the center and close it up. Shape it to look like a small loaf.
Repeat with the second ball or you can make 4 smaller balls. (They will take less time to cook.)
Bake at 350*F for 30-45 minutes.

    great idea to get the green veggies into a meal but next time i will add a little more spice as it was a little bland but i will make again cuz it was very easy. - 5/24/07

    I shredded the zucchini so had no problem blending it with the meat. Added a spoonful of pizza sauce on top during the last few minutes of cooking so added in the extra cals. Easy to make and flavorful makes a great pizza meatloaf! - 4/26/07
