Number of Servings: 4

Ingredients

    1/2 lb ground beef
    1/2 onion, chopped fine
    1 zuchini squash, chopped fine
    3 garlic cloves, chopped fine
    1/2 cup bread crumbs
    1 egg

    2 oz Mozzarella cheese, on the side

Directions

Mix first 6 ingredients with your hands until well blended. Separate into 2 halves.
Roll each half into a ball then flatten it out in the palm of your hand.
Place 1 oz of mozzarella cheese in the center and close it up. Shape it to look like a small loaf.
Repeat with the second ball or you can make 4 smaller balls. (They will take less time to cook.)
Bake at 350*F for 30-45 minutes.

    great idea to get the green veggies into a meal but next time i will add a little more spice as it was a little bland but i will make again cuz it was very easy. - 5/24/07

    I shredded the zucchini so had no problem blending it with the meat. Added a spoonful of pizza sauce on top during the last few minutes of cooking so added in the extra cals. Easy to make and flavorful makes a great pizza meatloaf! - 4/26/07
