Ingredients

    1 C egg beaters
    4 oz cream cheese
    2 oz Gorgonzola
    sea salt, fresh ground
    black pepper, fresh ground
    1/8 t dry mustard

Directions

Set cream cheese out to soften (or microwave for about 7 to 10 seconds)

Mix eggs, S&P, dry mustard and cream cheese.

Spray a skillet with Pam, add eggs. Add gorgonzola (shredded or crumbled into small pieces).

Sprinkle shells with a few drops of water, then microwave each shell for about 13-15 seconds.

Put eggs in shells and wrap.

Leave out to cool for a few minutes, then put in saran wrap or zip-loc baggies and freeze.

To cook, microwave a frozen wrap for about 1:15 to 1:45. Refrigerated, cook time is about :45 to :55
