Ingredients

    3 tbs canola oil
    1 onion, chopped
    1 clove garlic, minced
    1 carrot, thinly sliced
    1 green bell pepper, cut in strips
    1 red bell pepper, cut in strips
    1 zucchini, quartered and sliced
    1 yellow crookneck squash, quartered and sliced
    1 cup sliced okra
    1 cup whole kernel corn
    2 tbs lite soy sauce
    2 tbs cornstarch
    1 cup water

Directions

Wash and prepare vegetables. Heat oil in a large skillet. Add onion and garlic and cook 3 minutes, stirring constantly. Add carrot and peppers. Continue stirring 5 minutes. Add zucchini, yellow squash, okra and corn, stirring 5 minutes more. In measuring cup, mix cornstarch and soy sauce. Then fill the cup with water and stir. Add this mixture to skillet, cover, reduce heat and cook 10 minutes, stirring frequently. Makes 6 cups.
