Introduction

Number of Servings: 4

Ingredients

    2 Chicken Breast, no skin, bone removed
    3 slices of Butterball Turkey Bacon
    1/2 cup of shredded Mozzarella Cheese
    4 tbsp chopped Onions
    1 tbsp Oregano, ground
    Salt & Pepper to taste
    2 cloves of Garlic
    2 tbsp of Olive Oil
    1 serving of I Can't Believe It's Not Butter, Garlic & Herb Flavored Spray
    1/2 tbsp Basil
    1 tsp Parsley, dried.

Directions

Divide each chicken breast in two equal pieces and place them between plastic wrap and proceed to flatten it with a meat tenderizer tool, be careful in this step because you must be gentle so you don't break the meat so do not make them to flat as they would need to hold the filling.

Proceed to mix in a bowl the olive oil, salt, pepper, the 2 cloves of garlic smashed, the basil, parsley and oregano. Paint the outside of the breasts with this mix and if some mix is left you can put a little bit in the inside for extra flavor, although is not needed.

After you are done with this step, proceed to chop the 3 slices of bacon and mix them with the mozzarella cheese and the chopped onions. Place this inside the chicken breasts and tight them up with a cord.

Take an oven resistant pan, spray with the garlic and herb flavored spray, place the 4 chicken breast and put them in a 250F oven.

You can serve them with grilled vegetables on side or a green salad.

Makes 4 servings of 1/2 chicken breast.

    I'm cooking this tonight, was just wondering how long it has to be in the oven for? I'll check it out every 10 minutes, but would be handy to include that in the recipe (no clue how much of the 50 min preparation is included for rolling the chicken and all) - 1/3/08
