Introduction

I orginally got this recipe from BigOven.com and there are a couple of variations on SparkPeople, but not exactly, we loved this so I added this version. I did the same as others and didn't include the bread in the calculations so you could use whatever bread you want. Ingredients

    2 large, ripe bananas
    1/2 teaspoon vanilla extract
    1 egg
    3 egg whites
    3/4 cup low fat milk
    8 slices bread (the recipe actually makes more with most bread)
    1/2 teaspoon ground cinnamon


Directions

Puree the bananas, vnailla, egg, egg whiltes, and milk. Preheat griddle to 375 degrees. Dip bread in mixture on both sides and to cover evenly. Place bread on griddle and cook until lightly brown, flip and cook until done. Dust with cinnamon and serve.
