Introduction

This one dish wonder salad is literally "loaded" with all the good stuff you love about Mexican food without the grease. Makes a great meal salad and since it's packed with protein & good carbs it keeps you satisfied for a LONG time. Ingredients

    1 lb 93% or more lean ground beef
    1 cup frozen corn
    1 can (15 oz) black beans, rinsed
    1 pkg McCormick Grill Mates Mexican Fiesta Marinade
    1 box Near East Original Couscous
    1.5 cups water
    20 cherry tomatoes, diced
    1 of each green, yellow & red bell pepper, diced
    1 clove garlic, minced
    1 cup salsa
    1 lime, juiced
    1 pkg V&V Supremo Queso Fresco

Directions

Start by dicing the vegetables and garlic. Put the diced tomatoes and peppers aside in a large mixing bowl.

In a large skillet, cook the beef, draining off the fat as needed. Add the garlic when the beef is almost done and stir to cook until beef is fully browned. Add corn, beans and seasoning package and cook for another 2 minutes.

Once the beef mix is done, pour it on top of the diced vegetables in the bowl and mix everything together while warm.

Return the skillet to the stove and add the water. Bring water to a boil and then add the box of couscous. Stir in couscous and turn off the heat. Once couscous has absorbed all the water and is fluffy (about 3 minutes), pour over beef & veggie mixture in the bowl and mix in. Top with salsa & the juice from one lime and stir everything together well to coat and season.

At this point, cover the bowl and refrigerate for at least 4 hours or until everything is cold. Once cold, crumble in the queso fresco & serve.
