Ingredients

1 pkg Flour Tortilla (8 Inch)
1/2 Cup Cheddar Cheese, shredded
1/2 Cup Monterey Jack Cheese, shredded
1 Can Mexicorn (11 oz.)
1 Can Diced Tomatoes (15.5 oz.)
2 Cans Pinto Beans (15.5 oz.)
4 Cans Red Kidney Beans (15.5 oz.)
2 Cups Brown Rice, uncooked
4 Cups Water
Directions
1) Add Brown Rice to 4 Cups of water and allow to boil. Reduce heat to medium low and simmer for 35-40 minutes.
2) The last 5 minutes of the rice cooking...combine the beans, corn, and tomatoes in a large skillet on medium. Combine rice and stir thoroughly.
3) Assembly the burrito-add cheese and freeze or serve immediately.
