Ingredients

2 Tbsp Coconut oil or Olive Oil
1 Red onion
2 Stalks Celery
4 cloves Garlic
2 cups low-sodium chicken broth (or vegetable)
1.5 cups chopped yucca (or red potato)
1.5 cups chopped sweet potato
1/2 tsp sea salt
1/2 tsp black pepper
2-15 oz can beans (any)
1-15 oz can chickpeas
2 Tbsp tomato paste
1 Tbsp molasses (gluten-free)
Dash hot pepper sauce
Directions
In dutch oven, heat coconut butter (olive oil) over med-high heat. Add onion and celery and saute until soft. Add garlic. heat through.
Add stock, potatoes, yucca, salt, and pepper. Boil until potatoes are semi-soft (about 10 min.)
Add beans, chickpeas, tomato paste, molasses and let simmer 5 minutes. Stir occasionally so nothing sticks to the bottom.
Adjust flavor with salt and pepper and hot sauce.
Excellent served with grilled chicken.
