Introduction

This recipe used what I had left in the refrigerator and turned out so well I decided to record it! You can substitute other vegetables, of course! This recipe used what I had left in the refrigerator and turned out so well I decided to record it! You can substitute other vegetables, of course!

Ingredients

14 oz. pkg. Turkey Smoked Sausage
    fresh carrots
    fresh celery
    fresh onion
fresh bell pepper (any color-I had purple and green)
    crookneck yellow squash
1 can diced tomatoes with no salt
    Mrs. Dash Table Blend
    Mrs. Dash Garlic and Herb

Directions

Makes 6

I cook this on the electric skillet, sauteing the carrots first since they're the most dense. Then, saute all the rest of the fresh veggies, and add the tomatoes at the very end. Serve over brown rice! Yum!

    Incredible!
I make this all the time, but use sweet potato instead of squash. - 11/5/17

    Very Good
Added some hot pepper to spice it up. Sausage makes if very high in sodium so not good for those watching sodium intake. - 3/9/12

Yes, it does matter which kind of sausage you use... You can get it with low sodium. :o)
